8. Hans Schenk Commemorative Award for the Most Innovative Dish utilizing Indigenous Ingredients Fresh Mango Mousse Topped Carrot Cake Served with Candied Red Pepper and Spicy Smoked Mango Salad, Red Pepper Paint and Cocoa Tuille Sticks.
In preparation for the competition The Bonaire Culinary Team 2013 had organized cookouts at the SGB at Chez Nous. During the cookouts exquisite, colorful and attractive dishes were prepared with local fresh ingredients which reflected our warm tropical ambience.
The team also received assistance in trainings and evaluations from Mr. Josué Merced from Puerto Rico and Mr. Henny Kolenbander from Curaçao. After organizing several cookouts for guests and intensive trainings the team was well prepared and left for Miami on Tuesday, June 25 2013.

BONHATA is part of the Caribbean Hotel & Tourism Association (CHTA) and the CHTA annually organizes the Taste of the Caribbean event. This is the one Caribbean food and beverage festival not to be missed. This event gives all the participants the opportunity to network, improve their professional skills and cheer on colleagues in competition, before a large audience of industry and consumer culinary enthusiasts.
The preparation for the Taste of the Caribbean starts in the Caribbean as each island holds individual competitions to select the 3 chefs, 1 pastry chef and 1 bartender that will make their national team.
